Reverse function in the cutter-emulsifier. What is it for?

The new Sammic K/KE cutter/emulsifier features the reverse function, which causes the machine to rotate in reverse at a speed of between 100 and 500 rpm. What is this function useful for?
When the blades are reversed, they mix the product instead of cutting it. This is useful for adding ingredients during the cycle and mixing them with the already cut product, to create the desired mixture, with cut and uncut products, in the same cycle.
The reverse function is also useful for stirring the product that is being crushed, ground or mixed and that remains on the edges of the hopper, to incorporate it into the mixture again.
