Recipe: Peanut Butter

If you want to make homemade peanut butter, in this post you’ll find a simple, tasty and very versatile recipe.
As well as learning how to prepare peanut butter with the food processor-emulsifier, you’ll see two easy ideas for serving it on sourdough bread: with blueberry jam or with banana, honey and desiccated coconut.
Ingredients:
- 900 g peeled peanuts
- 60 g sugar
- 5 g salt
- 100 g sourdough bread
- 50 g blueberry jam
- 60 g banana
- 5 g honey
- 3 g desiccated coconut
Preparation:
1. Place the peeled peanuts on a tray. Add the salt and brown them in the salamander until they take on a light golden colour.
2. Remove them and leave them to rest for 5 minutes.
3. Put the peanuts, salt and sugar into the food processor-emulsifier. Use the micro-serrated blade and blend for 5 minutes, until you obtain a smooth, even peanut butter.
4. Toast 4 slices of sourdough bread.
5. Spread two slices of toast with a generous tablespoon of peanut butter. Add a tablespoon of blueberry jam on top, spreading it evenly.
6. Spread the other two slices of toast with peanut butter. Place the banana, sliced into rounds, on top. Finish with a little honey and desiccated coconut over the top.
7. Serve the toast immediately so you can enjoy all the creaminess of the peanut butter and the contrast of flavours.

Chef’s notes
If you prefer peanut butter with a less fine, even texture, reduce the blending time. You can also add a few whole peanuts at the end for an extra crunchy touch.
