Déli-cut PLUS: A real solution for onion dicing

Onion is present in nearly every professional kitchen. It’s the base for sautés, salads, garnishes and many sauces. But working with it is never easy: its juice causes it to deteriorate quickly, skins accumulate in the cuts, and cleaning becomes complicated when processing large volumes.
One of our clients came to us with a clear need: to achieve an onion cut that is efficient, uniform and easy to clean. That’s how the new WG-6 grid was developed. Combined with the FCE-5x5G disc, it delivers the new Déli-cut PLUS: 5 × 5 × 6 mm dice, quickly and consistently.

This cut, available for our Heavy Duty commercial vegetable preparation machines, is especially suitable for common preparations such as pico de gallo, onion salads, sautés or garnishes. The result is comparable to a manual cut, but with the productivity of an automatic process.

The layout of the blades treats the product more gently: the onion retains its juiciness and freshness for longer, extending its shelf life. This also simplifies storage after cutting and allows you to plan production in advance. What’s more, reduced damage means less waste and better use of raw materials.
Daily hygiene of the grid has also been a key consideration. Since the blades don’t intersect, skins don’t get trapped and the grid is easier to clean using the dedicated universal grid cleaner. This saves time and ensures safer operation in high-volume kitchens.
Is Déli-cut PLUS only for onions?
Although it has been designed with onion in mind, Déli-cut PLUS is also ideal for other water-rich vegetables such as peppers or courgettes. These ingredients also benefit from a uniform cut that preserves their flavour and freshness, making storage easier and reducing liquid loss. While it can be used with other types of vegetables, results are especially optimal with this kind of produce.
